    Welcome to the Power of Positive Workouts e-Newsletter. This edition's affirmation is "I am Grateful". Each day is a new experience. I can choose my attitudes about myself and today. I am grateful for sunrises and sunsets, sunshine and rain, seasons changing and most of all life changes. The "I am Grateful" affirmation keeps me focused on what is good in my life and the many gifts that I have.

   Here's an excerpt from May 5 One Day at a Time in Alanon book. "A period of meditation, every day, is necessary to spiritual development. I control these 'thinking times'. If I meditate on what is good in my life, it will increase day by day and crowd out the self-pity and resentment over what I lack and what is hurting me".

    So as you workout, reaffirm all the things that you are grateful for. As I walk outside, I focus my attention on the beauty around me and I am grateful for the fresh air, abundance of trees and wildlife. When you have an attitude of gratitude, you will feel good about yourself: mind, body and soul and experience the harmony of the universal goodness.

South American Quinoa Salad

Recipe for 6-8 as a side dish by Amalia Damgaard, Cooking for Fun… Seriously! LLC

Salad Ingredients

  • 1 cup cooked Quinoa (follow box instructions) use chicken stock instead of water for better flavor
  • 1 European/English cucumber, seeded with a spoon, sliced into half moons
  • 20 grape tomatoes, washed
  • 1 head of leaf lettuce, washed, trimmed, cut into a little larger than bite size pieces
  • 1 jello ring-mold for shaping the salad into a wreath
  • 1 large salad tomato for the bow

Vinaigrette Ingredients

  • 1/2 cup loosely packed mint leaves, washed
  • 5-6 large garlic cloves, peeled
  • 1/4 cup champagne vinegar
  • 1/2-3/4 cup canola oil
  • Kosher salt and freshly ground white or black pepper to taste

Directions

  1. Put all vinaigrette ingredients in food processor or blender and puree. Taste and adjust seasonings. Set aside.
  2. To make the bow, "peel" the tomato with a small very sharp paring knife as if you were peeling an orange in a spiral fashion beginning at the top. As you peel the tomato, make sure you let the "ribbon" rest on the cutting board as it will break easily. Form the ribbon with your fingers following the natural curves of the ribbon.
  3. Put all salad ingredients in bowl and add some of the vinaigrette and toss.
  4. Add some freshly ground pepper.
  5. Distribute salad in ring mold making sure to distribute all ingredients well, especially the cucumbers and grape tomatoes.
  6. Garnish with the bow.
